Blackstone Old Bay Chicken and Potatoes

Blackstone Old Bay Chicken and Potatoes is a complete dinner recipe for the griddle, super simple with a homemade dipping sauce.

This is a pretty simple dinner recipe for the griddle, but oh my, SOOOOO yummy Blackstone Old Bay Chicken and Potatoes is for sure a new favorite!

How to make Blackstone Old Bay Chicken and Potatoes:

First cut a pound of redskin potatoes into bite size pieces, and 1 1/2 pounds of boneless, skinless chicken thighs into similar size pieces.

Then mince some garlic and get your Old Bay seasoning and lemon juice ready to go as well.

I also made a dipping sauce by combining mayo, Old Bay, lemon juice, and Tabasco sauce.

First put some cooking oil of choice on your griddle along with the potatoes, kosher salt, and pepper.

Squirt some water on them and cover with a melting dome for 6 to 7 minutes.

Remove the dome to mix them a few times with hibachi spatulas, adding more water and covering again each time.

Set the melting dome aside and add more cooking oil along with the chicken and Old Bay seasoning.

This will cook another 6 to 7 minutes, mixing together with hibachi spatulas.

Finally, the minced garlic and lemon juice join the party.

Cook another few minutes and dinner is ready 🙂

Ingredients
  

Blackstone Old Bay Chicken and Potatoes

  • cooking oil of choice
  • 1- pound red skin potatoes diced
  • kosher salt pepper
  • 1 1/2 pounds boneless skinless chicken thighs (or breasts) cut into bite size pieces
  • 1 1/2 tablespoons Old Bay seasoning
  • 5 to 6 cloves garlic minced
  • 1 tablespoon lemon juice

Old Bay Dipping Sauce

  • 1/2 cup mayo
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • a few dashes Tabasco sauce

Instructions

  • Preheat the griddle to medium heat for a few minutes. Add some cooking oil, the potatoes, kosher salt, pepper, and some water. Cover with a melting dome and cook 6 to 7 minutes. Remove the dome a few times to flip the potatoes and add more water each time before covering again.
  • Set the melting dome aside and add more cooking oil, the chicken, and Old Bay seasoning. Cook together 6 to 7 more minutes, mixing with hibachi spatulas a few times.
  • Add the garlic and lemon juice, cook another 2 to 3 minutes. Taste for seasoning and add more Old Bay if needed. Serve with the Old Bay Dipping Sauce.

Old Bay Dipping Sauce

  • Put the ingredients in a bowl stir until evenly mixed.
