Ingredients:

– 1/4 cup chia seeds
– 1 cup milk (you can use almond milk, coconut milk, or any milk of your choice)
– 1/2 cup fresh or frozen blueberries
– 1-2 tablespoons honey or maple syrup (optional, adjust to taste)
– 1/2 teaspoon vanilla extract (optional)
– A pinch of salt

Directions:

1. In a bowl, mix together the chia seeds, milk, honey or maple syrup, vanilla extract, and a pinch of salt. Stir well to combine all the ingredients.
2. Let the mixture sit for about 5 minutes, then stir again to break up any clumps of chia seeds.
3. Cover the bowl and refrigerate the mixture for at least 2 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
4. In a blender or food processor, blend the blueberries until smooth. You can add a little water if needed to help with blending.
5. To assemble the pudding, layer the chia pudding and blueberry puree in a glass or jar. You can alternate between layers of chia pudding and blueberry puree to create a marbled effect.
6. Top with additional fresh blueberries or other toppings of your choice, such as granola, nuts, or shredded coconut.
7. Enjoy your delicious and nutritious blueberry chia pudding!
