Let’s mix it up a bit for dinner, how about Buffalo Chicken Meatball Subs?

Ingredients:

1 lb. Ground Chicken (preferably thigh for more flavor and moisture)
3/4 Cup Panko Breadcrumbs
1/2 Cup Freshly Grated Parmesan
1/4 Cup Finely Diced Fresh Parsley
1 Small Onion – Grated
1 Garlic clove, finely diced
1 tsp Worcestershire Sauce
1 Egg
3/4 tsp Salt
1/4 tsp Black Pepper
5 oz. Frank’s Buffalo Sauce (or your favorite buffalo sauce)
4 – 8″ Sub Rolls
8 Tbsp Blue Cheese Sauce:  (or ranch dressing as an alternative)
5 slices Monterey Jack Cheese, each cut into 4 mini squares
Fresh Chives – Finely diced, for garnish

Directions:

Prepare the Meatballs: In a large bowl, mix together the ground chicken, panko breadcrumbs, parmesan, parsley, grated onion, garlic, Worcestershire sauce, egg, salt, and pepper until well combined. Scoop out the mixture and form into meatballs.

Cook the Meatballs: Arrange the meatballs on a baking tray, spray with oil, and bake at 400°F (200°C) for 20 minutes or until golden and cooked through.

Sauce for the Meatballs: After baking, toss the meatballs in buffalo sauce.

Assemble the Subs: Cut the sub rolls open (not all the way through), stuff with sauced meatballs, and top each meatball with a mini square of Monterey Jack cheese.

Final Bake: Place the subs on a baking tray and broil in the oven until the cheese melts.

Serve: Drizzle with blue cheese sauce and garnish with chives.
