Creamy Cajun Chicken Pasta

Don’t wait until you go out to eat to get this popular Creamy Cajun Chicken Pasta dish. It is so easy to make at home, it will become a family favorite and regular meal request. Tender Cajun seasoned chicken breasts, sauteed peppers, onions and mushrooms, over perfectly cooked pasta and covered with this delightful creamy alfredo sauce.

  • 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 bell pepper chopped
  • 10 oz cremini mushrooms sliced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon powdered garlic (or 1 fresh clove, minced)
  • ¼ teaspoon red pepper flakes adjust to taste
  • Salt and pepper to taste
  • 1 lb. pasta penne, rotini, or your favorite

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

Season the Chicken:

  • Season the chicken pieces with Cajun seasoning, ensuring they are well-coated.

Sauté the Vegetables:

  • In a large skillet, heat olive oil over medium-high heat. Add the chopped onion and bell pepper, cooking until softened, about 4-5 minutes. Add the sliced mushrooms and cook for an additional 3-4 minutes, until they begin to brown.

Cook the Chicken:

  • Add the seasoned chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until browned and cooked through.

Make the Sauce:

  • Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 5-10 minutes, or until the sauce has thickened.

Combine the Ingredients:

  • Add the cooked pasta to the skillet, tossing to coat the pasta in the creamy sauce. Stir in the grated Parmesan cheese, garlic and red pepper flakes. Taste and adjust seasoning with salt and pepper if needed.

Serve:

  • Divide the pasta among plates and garnish with fresh parsley, if desired.
