Greek Chicken Skewers with Lemon Rice

Greek Chicken Skewers with Lemon Rice is healthy and delicious, packed with protein and beneficial herbs and spices. Pair the chicken skewers with a light a fluffy Lemon Rice for a complete and satisfying meal. Who said eating healthy can’t be good and good for you?

Greek Chicken Skewers:

  • 1.5 lbs boneless skinless chicken thighs, cut into 1.5-inch pieces
  • Juice from 1/2 large lemon
  • 1 tbsp olive oil
  • 3 garlic cloves minced
  • 1 1/2 tsp dried oregano
  • 1 tsp sweet paprika
  • 1 tsp honey or maple syrup
  • 1/2 tsp kosher salt

Lemon Rice:

  • 1 tbsp olive oil
  • 2 garlic cloves thinly sliced
  • 1 cup long-grain white rice
  • 1 3/4 cups low-sodium chicken stock or water
  • 1 tbsp lemon zest
  • Kosher salt and freshly ground black pepper to taste
  • Juice from 1/2 large lemon

To Serve:

  • Plain yogurt + a pinch of salt
  • Fresh dill
  • Marinated olives optional

Prepare Skewers:

  1. If using wooden skewers, soak them in water for at least 15 minutes before using.

Marinate Chicken:

  1. In a large bowl, combine the chicken pieces with lemon juice, olive oil, minced garlic, dried oregano, sweet paprika, honey or maple syrup, and kosher salt. Toss to coat evenly.
  2. Marinate at room temperature for 15-20 minutes or cover and refrigerate for up to overnight.

Prepare Lemon Rice:

  1. Heat olive oil over medium-low heat in a medium pot with a tight-fitting lid.
  2. Add the thinly sliced garlic and rice, and toast for 3-4 minutes or until fragrant.
  3. Add chicken stock, lemon zest, and salt. Bring to a boil, then reduce heat to the lowest setting, cover, and cook for 15 minutes.
  4. Turn off the heat and leave covered for another 10 minutes. Fluff with a fork and stir in the lemon juice. Season with black pepper to taste.

Cook Chicken:

  1. Preheat the broiler and line a baking sheet with parchment paper or aluminum foil. Position an oven rack about 5 inches from the heating element.
  2. Thread the marinated chicken pieces onto the skewers.
  3. Broil for 12-15 minutes, turning once, until the chicken is cooked through, and the edges are lightly charred.
  4. Optional Cooking Method: Grill or grill pan

Serve:

  1. Serve the Greek chicken skewers over the lemon rice.
  2. Accompany with a dollop of plain yogurt seasoned with a pinch of salt, fresh dill, and marinated olives if desired.
