Hearty White Beans and Smoked Sausage Stew is perfect when you are looking for a warm, comforting dinner. Serve this stew over rice for a dish that is sure to please and will be quick to become a favorite go-to meal.

  • 1 pound smoked turkey sausage sliced
  • 2 cans white beans such as cannellini or Great Northern beans, drained and rinsed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • Fresh parsley chopped (for garnish)

Prepare the Sausage:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Remove the sausage from the pot and set it aside.

Sauté the Aromatics:

  1. In the same pot, add the chopped onion and minced garlic.
  2. Sauté until the onion becomes translucent, about 3-4 minutes.

Combine and Simmer:

  1. Return the sausage to the pot.
  2. Add the white beans, chicken broth, dried thyme, and dried parsley.
  3. Season with salt and pepper to taste.
  4. Stir well to combine.

Cook and Thicken:

  1. Bring the mixture to a boil.
  2. Reduce the heat and let it simmer for about 20-25 minutes, or until the flavors meld together and the broth slightly thickens.

Serve and Enjoy:

  1. Serve the dish over cooked white rice.
  2. Garnish with fresh chopped parsley.
