Combined sweet and tart fresh tangerine juice with an aromatic juniper syrup and some high-quality gin to create a frothy and fizzy fun cocktail.  A little egg white and a lot of shaking helps to create that beautiful, velvety crown of foam on top. Shake up a few and have a party!

Ingredients:

Serves 1:

2 oz botanical gin (such as Hendrick’s)
1/2 oz juniper syrup (recipe below)
11/2 oz fresh tangerine juice
1/2 oz fresh lemon juice
1 egg white, room temperature (preferably organic)
2 oz sparkling water
ice
tangerine wedge, to garnish
fresh juniper, to garnish (optional)

Juniper Syrup:
1/2 c granulated sugar
1/2 c water
1 T dried juniper berries, lightly crushed

In a small saucepan over medium heat, combine the sugar, water, and juniper berries and give it a stir to combine.  Cook until sugar dissolves.  Turn heat off and allow juniper berries to steep until syrup has cooled to room temperature then strain syrup and transfer to a glass bottle or mason jar.  Store in fridge until ready to assemble cocktail.

Make the Gin Fizz:

In a cocktail shaker, combine the gin, syrup, lemon and tangerine juices, and egg white.  Place lid on and shake vigorously for about 30 seconds.  Add ice to the shaker and shake again for about another 2 minutes (yes, that long!), until shaker is very cold.  Strain into a glass.  Pour sparkling water into the shaker, swirling is around to pick up the rest of the foam and pour it into the glass.  Garnish with a sprig of fresh juniper and a tangerine wedge and enjoy!
