Garlic Cream Steak Bites

Equipment
- Large Skillet (I like cast-iron, it goes from stove/oven to table)
Ingredients
- 1/4 cup water
- 3 teaspoons cornstarch
- 2 teaspoons red wine vinegar
- 1/2 teaspoon baking soda
- 1 1/4 pounds thin-cut steak cut into 4 pieces
- Salt and freshly ground black pepper
- 4 tablespoons butter divided
- 2 cloves garlic minced
- 1/2 cup heavy cream
- Chopped fresh parsley optional
Instructions
- In a zip-top bag, mix water, cornstarch, vinegar, and baking soda. Add steak, seal, and coat evenly. Let rest for 30 minutes at room temperature.
- Discard marinade and dry steaks. In a skillet, melt 2 tablespoons butter over medium-high and sear steaks for 30-45 seconds each side. Remove steaks.
- In the same skillet, add remaining butter. Sauté garlic, then add cream and simmer. Return steaks to skillet, simmer for 1 minute, and serve with parsley.
