Peruvian Chicken & Rice with Green Sauce

Ingredients
- 4 chicken thighs
- 2 cups of rice
- 1 onion chopped
- 4 cloves of garlic minced
- 1 cup of chicken broth
- 1/2 cup of cilantro
- 1/4 cup of parsley
- 1 jalapeño seeded
- 1 lime juiced
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- In a large pot, sauté the onion and garlic until translucent.
- Add the chicken thighs and brown on both sides.
- Stir in the rice and chicken broth, then bring to a boil.
- Reduce heat, cover, and simmer until rice is cooked and chicken is tender.
