Ingredients
  

  • 4 slices cooked bacon use turkey or beef bacon, chopped
  • tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 teaspoons minced garlic
  • 2 cups whole white mushrooms cleaned and patted dry
  • 3 ounces about ⅓ cup cream cheese, cut into cubes
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon freshly chopped parsley

Instructions
 

Prepare the Bacon:

  • In a large skillet, cook the bacon over medium heat until crispy.
  • Remove the bacon and place it on paper towels to drain excess fat. Leave about 1 tablespoon of bacon fat in the pan for flavor.

Sauté the Mushrooms:

  • Add the olive oil and butter to the skillet with the bacon fat. Heat over medium-high until the butter melts.
  • Add the garlic and cook for 30 seconds, just until fragrant.
  • Add the mushrooms and cook for 5–6 minutes, stirring occasionally, until golden brown and tender.

Make the Creamy Sauce:

  • Lower the heat to medium. Add the cream cheese cubes, stirring gently until melted and smooth.
  • Pour in the heavy cream, then stir in Parmesan cheese, Italian seasoning, oregano, salt, and black pepper.
  • Simmer for 4–5 minutes, stirring often, until the sauce thickens and coats the mushrooms.

Add the Bacon and Finish:

  • Return the crispy bacon to the skillet and stir gently to combine.
  • Remove from heat and sprinkle with fresh parsley before serving.

Serve and Enjoy:

  • Serve hot as a side dish with roasted chicken, grilled steak, or pasta — or enjoy it as a comforting main dish with crusty bread to soak up the sauce.
