Eggs In a Boat

The most creative yet most delicious breakfast you could make that is just too darn cute – Eggs in a Boat! The bread is crispy on the outside but super soft on the center and stuffed with eggs and meat. Brunch could not get any better!

Ingredients
  

  • 2 demi baguettes
  • 6 eggs
  • beef bacon
  • mozzarella cheese shredded
  • basil chopped
  • parsley chopped
  • grated parmesan
  • red pepper flakes
  • salt to taste
  • black pepper to taste

Garlic Butter:

  • 1/2 cup unsalted butter melted
  • 2 tablespoons parsley finely chopped
  • 1 tablespoon garlic finely minced
  • 3 tablespoons parmesan grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Instructions
 

  • Preheat oven to 400°F.
  • To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Mix together and set aside.
  • Take each baguette and cut three sections out of each one so it creates three wells.
  • Brush the garlic butter all along the inside and outside.
  • Add (uncooked) beef bacon to the bottom of each well and then mozzarella cheese. Crack an egg on top into each well. (The bacon will cook in the oven)
  • Bake in the oven for 12 to 15 minutes, larger eggs will take longer to cook.
  • Take out of the oven once the egg whites are set and finish it off with salt, black pepper, chopped basil, parsley, more parmesan, and a sprinkle of red pepper flakes to enjoy!
