Exotic Citrus Almond Chicken Crunch

Ingredients
  

  • 3 cups thinly sliced Napa or green cabbage
  • 1 cup thinly sliced red cabbage
  • 1 cup shredded carrots
  • 1 cup thinly sliced sugar snap peas
  • 3 green onions thinly sliced (white and green parts)
  • 3 cups cooked shredded chicken (about 12 ounces cooked)
  • 1 cup orange segments can use drained canned mandarin oranges or fresh
  • 1 cup roughly chopped fresh cilantro leaves
  • cup toasted slivered or sliced almonds

Optional: Black and/or white sesame seeds for garnish

Dressing:

  • ¼ cup unseasoned rice vinegar
  • 3 tablespoons toasted sesame oil
  • 3 tablespoons coconut aminos
  • 2 tablespoons avocado oil or extra-virgin olive oil
  • ½ teaspoon ground ginger
  • ¼ teaspoon garlic powder

Instructions
 

  • In a large bowl, combine the cabbages, carrots, sugar snap peas, green onions, and chicken.
  • In a small bowl or jar, whisk together all dressing ingredients until well combined.
  • Pour dressing over the salad and toss to coat evenly.
  • Just before serving, gently fold in orange segments, cilantro, and almonds.
  • Garnish with sesame seeds if desired.
