1.5lbsbonelessskinless chicken thighs, cut into 1.5-inch pieces
Juice from 1/2 large lemon
1tbspolive oil
3garlic clovesminced
1 1/2tspdried oregano
1tspsweet paprika
1tsphoney or maple syrup
1/2tspkosher salt
Lemon Rice:
1tbspolive oil
2garlic clovesthinly sliced
1cuplong-grain white rice
1 3/4cupslow-sodium chicken stock or water
1tbsplemon zest
Kosher salt and freshly ground black pepperto taste

Plain yogurt + a pinch of salt

Instructions
Prepare Skewers:
If using wooden skewers, soak them in water for at least 15 minutes before using.
Marinate Chicken:
In a large bowl, combine the chicken pieces with lemon juice, olive oil, minced garlic, dried oregano, sweet paprika, honey or maple syrup, and kosher salt. Toss to coat evenly.
Marinate at room temperature for 15-20 minutes or cover and refrigerate for up to overnight.
Prepare Lemon Rice:
Heat olive oil over medium-low heat in a medium pot with a tight-fitting lid.
Add the thinly sliced garlic and rice, and toast for 3-4 minutes or until fragrant.
Add chicken stock, lemon zest, and salt. Bring to a boil, then reduce heat to the lowest setting, cover, and cook for 15 minutes.
Turn off the heat and leave covered for another 10 minutes. Fluff with a fork and stir in the lemon juice. Season with black pepper to taste.
Cook Chicken:
Preheat the broiler and line a baking sheet with parchment paper or aluminum foil. Position an oven rack about 5 inches from the heating element.
Thread the marinated chicken pieces onto the skewers.
Broil for 12-15 minutes, turning once, until the chicken is cooked through, and the edges are lightly charred.
Optional Cooking Method: Grill or grill pan
