Ingredients

  • 2 1/2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 1 cup powdered sugar
  • 1/2 cup chopped nuts optional
  • 8 oz white chocolate or semi-sweet chocolate melted

Instructions

  • Mix Ingredients: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and powdered sugar. If using, fold in the chopped nuts. Mix until everything is well combined and forms a thick, sticky dough.
  • Form Balls: Roll the mixture into small balls and place them on a parchment-lined baking sheet. Freeze the balls for about 30 minutes to set.
  • Melt Chocolate: In a microwave-safe bowl, melt the white or semi-sweet chocolate in 30-second intervals, stirring after each, until smooth.
  • Dip Balls: Using a fork or toothpick, dip each frozen ball into the melted chocolate, coating it completely. Return the balls to the parchment-lined baking sheet.
  • Set: Let the chocolate-covered balls sit at room temperature or refrigerate until the chocolate is set.
