Instructions
Chicken:
Mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt, and pepper.
Season both sides of the chicken breasts thoroughly.
Preheat a grill pan over medium-high heat and grill the chicken until it reaches an internal temperature of 165°F, approximately 6-7 minutes per side.
Remove from heat and let rest.
Cheese Sauce:
Melt butter in a medium saucepot over medium heat.
Whisk in flour and cook until it starts to bubble around the edges.
Gradually add milk, whisking continuously to prevent lumps.
Heat the mixture until hot enough to melt the cheese but not boiling.
Gradually whisk in the cheese until smooth and fully incorporated.
Stir in paprika, cayenne, and season with salt if needed.
Serve the sauce hot over the grilled chicken.
