Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup shredded cheddar cheese
  • 1 cup sliced mushrooms
  • 1 medium onion sliced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

  • Season the chicken breasts with salt and pepper.
  • In a skillet, heat olive oil over medium heat and cook the chicken until golden brown on both sides.
  • Remove the chicken and set aside. In the same skillet, add onions and mushrooms, sautéing until soft.
  • Add chicken broth and heavy cream to the skillet, stirring to combine.
  • Return the chicken to the skillet, spooning the sauce over the top.
  • Sprinkle cheddar cheese on top of the chicken.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
