Ingredients
  

For Shrimp:

  • 1 lb. peeled and de-veined shrimp
  • Juice of 1 ripe lime
  • 1/4 cup avocado oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tbsp brown sugar

Cabbage:

  • 1 1/2 cups thinly sliced cabbage
  • 2 tbsp avocado oil
  • 1 tbsp lime juice
  • 1/4-1/2 tsp salt to taste
  • 1/2 tsp sugar

Taco Sauce:

  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • 1/2 tbsp fresh lime juice
  • 2 tbsp minced fresh cilantro
  • 1 garlic clove pressed
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Toppings:

  • 1 ripe avocado sliced
  • 1/4 cup crumbled cotija cheese
  • 4-6 taco tortillas

Instructions
 

  • Marinate shrimp: Combine shrimp, avocado oil, lime juice, and all seasonings in a bowl. Set aside to marinate for 10 minutes.
  • Prepare cabbage: Toss cabbage with avocado oil, lime juice, salt, and sugar. Massage lightly and set aside.
  • Make sauce: Mix all sauce ingredients in a bowl. For smoother texture, blend if desired.
  • Cook shrimp: Heat a pan over medium-high. Sear marinated shrimp for about 45 seconds per side or until opaque. Remove immediately.
  • Assemble tacos: Warm tortillas, then layer with cabbage, shrimp, avocado slices, and cotija cheese. Drizzle with taco sauce.
