Ingredients:
Onion Rings:
1 1/3 cup all-purpose flour
1 cup red ale (can also use lager or another ale)
1/2 tsp baking powder
1 Tbsp Worcestershire sauce
Salt, to taste
Black pepper, to taste
1 large onion (white or sweet)
3-4 cups canola or vegetable oil for frying
Onion Ring Sauce:
1/4 cup mayonnaise
1/4 cup sour cream
2 tbsp ketchup
1 1/2 tbsp horseradish
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp black pepper
Pinch of cayenne pepper
Directions:
In a medium mixing bowl, whisk together the flour, baking powder, salt, and pepper.
Pour in the beer and Worcestershire sauce, whisking until smooth.
Let the batter sit covered for about 30 minutes.
Slice the onion into 1/4-inch to 1/2-inch-thick rings and pat dry with paper towels.
Heat the oil in a deep skillet or fryer to 350°F – 365°F.
Dip onion rings into the batter and fry in the oil until golden brown on both sides, flipping once.
Fry in batches, without overcrowding, and remove with metal tongs or a slotted spoon to a wire rack lined with paper towels.
Mix all sauce ingredients until smooth and serve with the hot onion rings.
