Ingredients:
2 large cucumbers, peeled and thinly sliced
2 teaspoons salt
2 tablespoons sesame oil
1 tablespoon soy sauce
2 tablespoons rice vinegar
1 tablespoon sugar
2 cloves garlic, minced
1 teaspoon chili flakes
2 tablespoons chopped fresh cilantro
1 tablespoon sesame seeds
Directions:
Place the cucumber slices in a bowl and sprinkle with salt. Let sit for 10 minutes to draw out water. Drain and squeeze out excess water.
In a small bowl, combine sesame oil, soy sauce, rice vinegar, sugar, garlic, and chili flakes to create the dressing.
Toss the cucumbers with the dressing, then garnish with cilantro and sesame seeds.
Chill before serving to enhance the flavors.
