The most creative yet most delicious breakfast you could make that is just too darn cute – Eggs in a Boat! The bread is crispy on the outside but super soft on the center and stuffed with eggs and meat. Brunch could not get any better!
Ingredients:
2 demi baguettes
6 eggs
beef bacon
mozzarella cheese, shredded
basil, chopped
parsley, chopped
grated parmesan
red pepper flakes
salt, to taste
black pepper, to taste
Garlic Butter:
1/2 cup unsalted butter, melted
2 tablespoons parsley, finely chopped
1 tablespoon garlic, finely minced
3 tablespoons parmesan, grated
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
Instructions:
- Preheat oven to 400°F.
- To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Mix together and set aside.
- Take each baguette and cut three sections out of each one so it creates three wells.
- Brush the garlic butter all along the inside and outside.
- Add (uncooked) beef bacon to the bottom of each well and then mozzarella cheese. Crack an egg on top into each well. (The bacon will cook in the oven)
- Bake in the oven for 12 to 15 minutes, larger eggs will take longer to cook.
- Take out of the oven once the egg whites are set and finish it off with salt, black pepper, chopped basil, parsley, more parmesan, and a sprinkle of red pepper flakes to enjoy!
