Eggs In a Boat

The most creative yet most delicious breakfast you could make that is just too darn cute – Eggs in a Boat! The bread is crispy on the outside but super soft on the center and stuffed with eggs and meat. Brunch could not get any better!

The most creative yet most delicious breakfast you could make that is just too darn cute – Eggs in a Boat! The bread is crispy on the outside but super soft on the center and stuffed with eggs and meat. Brunch could not get any better! 

Ingredients:

2 demi baguettes

6 eggs

beef bacon

mozzarella cheese, shredded

basil, chopped

parsley, chopped

grated parmesan

red pepper flakes

salt, to taste

black pepper, to taste

Garlic Butter:

1/2 cup unsalted butter, melted

2 tablespoons parsley, finely chopped

1 tablespoon garlic, finely minced

3 tablespoons parmesan, grated

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried oregano

Instructions:

  1. Preheat oven to 400°F.
  2. To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Mix together and set aside.
  3. Take each baguette and cut three sections out of each one so it creates three wells.
  4. Brush the garlic butter all along the inside and outside.
  5. Add (uncooked) beef bacon to the bottom of each well and then mozzarella cheese. Crack an egg on top into each well. (The bacon will cook in the oven)
  6. Bake in the oven for 12 to 15 minutes, larger eggs will take longer to cook.
  7. Take out of the oven once the egg whites are set and finish it off with salt, black pepper, chopped basil, parsley, more parmesan, and a sprinkle of red pepper flakes to enjoy!
