Ingredients:
2 frenched racks of lamb
10 to 12 garlic cloves
¼ cup extra virgin olive oil
1 cup lightly packed fresh parsley
2 teaspoons dry rosemary
½ teaspoon red pepper flakes
Kosher salt and ground black pepper to taste
Directions:
Preheat the oven to 450 degrees F (230 degrees C).
In a small food processor, combine garlic, olive oil, parsley, rosemary, and red pepper flakes. Blend until well combined and finely chopped.
Season the lamb racks all over with kosher salt and pepper.
Rub each rack of lamb all over with the marinade. Let the lamb marinate for 20 to 30 minutes at room temperature (or up to 1 hour if you have time).
Place the lamb racks (fat side up) on a sheet pan and roast on the top rack of the oven for 15 minutes.
Carefully remove from the oven, turn the racks over, and return to the oven. Cook for another 5 to 10 minutes, depending on your desired doneness.
Remove from the oven, tent with foil, and let rest for about 10 minutes before slicing.
