Ingredients
  

  • 2 frenched racks of lamb
  • 10 to 12 garlic cloves
  • ¼ cup extra virgin olive oil
  • 1 cup lightly packed fresh parsley
  • 2 teaspoons dry rosemary
  • ½ teaspoon red pepper flakes
  • Kosher salt and ground black pepper to taste

Instructions
 

  • Preheat the oven to 450 degrees F (230 degrees C).
  • In a small food processor, combine garlic, olive oil, parsley, rosemary, and red pepper flakes. Blend until well combined and finely chopped.
  • Season the lamb racks all over with kosher salt and pepper.
  • Rub each rack of lamb all over with the marinade. Let the lamb marinate for 20 to 30 minutes at room temperature (or up to 1 hour if you have time).
  • Place the lamb racks (fat side up) on a sheet pan and roast on the top rack of the oven for 15 minutes.
  • Carefully remove from the oven, turn the racks over, and return to the oven. Cook for another 5 to 10 minutes, depending on your desired doneness.
  • Remove from the oven, tent with foil, and let rest for about 10 minutes before slicing.
