Just whipped up this Rustic Rosemary-Infused Chicken Wrapped in Prosciutto for dinner tonight! So aromatic and absolutely delicious!
Ingredients:
3 large chicken breasts
Salt & pepper to taste
1/4 cup of olive oil
3 cloves of garlic, minced
1 sprig of rosemary, de-stemmed and finely chopped
6 sprigs of fresh rosemary
6 tablespoons of goat cheese (3–4 ounces)
6 slices of prosciutto
Directions:
Preheat the oven to 375°F (190°C). Grease a baking pan or skillet.
Cut all the chicken breasts in half. Make a slit down the middle of each half to create a pocket. Season with salt and pepper.
In a shallow bowl, combine the olive oil, minced garlic, and finely chopped rosemary. Dip each chicken half in the mixture, coating both sides.
Place the chicken in the prepared baking pan. Stuff each piece with approximately 1 tablespoon of goat cheese.
Top each piece of chicken with a sprig of rosemary and wrap in a slice of prosciutto. Use a toothpick to secure if necessary.
Bake for 35-45 minutes, checking for doneness at 35 minutes. Let cool slightly before serving.
