Pesto Eggs and Crispy Mortadella Sandwich

Indulge in this breakfast sandwich that combines two of my absolute favorite things: the viral pesto eggs and crispy mortadella. I opted for a pistachio pesto to compliment the mortadella and cooked everything all in one skillet, so it was super easy. 
Pesto Eggs and Crispy Mortadella Sandwich

Indulge in this breakfast Pesto Eggs and Crispy Mortadella Sandwich that combines two of my absolute favorite things: the viral pesto eggs and crispy mortadella. I opted for a pistachio pesto to compliment the mortadella and cooked everything all in one skillet, so it was super easy. Grab your ingredients to whip up a homemade pesto with basil, EVOO, garlic, parm, and pistachios! You can also use a store bought pesto.

In this recipe, we take the viral pesto eggs and elevate it to new heights. The fun thing about this recipe is that you can cook your eggs directly in the pesto. So, crack your eggs right into the pesto and cook until fried. Meanwhile, cook the mortadella and sizzle to perfection on the same skillet. The edges will crisp up to golden perfection, which adds a satisfying crunch to every bite. Add some mozzarella for a little extra creaminess!

This sandwich can really go on any type of bread, or even a bagel would be delicious! Full recipe below and happy weekend! This sandwich is sure to become a new breakfast favorite.

Ingredients:

  • 3/4 cup basil leaves
  • 3/4 cup olive oil
  • 2 garlic cloves
  • 1/2 cup parm cheese
  • Salt/pepper
  • 1/4 cup pistachios

Components:

  • 1 roll or bread of choice this would also be good on a bagel
  • A few slices of mortadella
  • 2 eggs
  • mozzarella cheese

Instructions:

  1. Make your pesto. In a food processor, add pesto ingredients and blend. Taste test and adjust accordingly.
  2. Toast toll and add a few scoops of pesto in a skillet, leaving room on the other side of the pan for the mortadella. Crack 2 eggs over top pesto and season with salt and pepper.
  3. Add a few slices of mortadella to the other side of the pan. As they cook, they will get smaller. Flip after about 4 min or when crispy. Continue to watch eggs and cook until desired
  4. Turn heat down to low and top mortadella with cheese and cover. The cheese will melt onto the mortadella.
  5. Spread pesto onto bread and add pesto eggs, cheesy mortadella and that’s it! Enjoy!
