Pineapple Layer Cake with Whipped Cream Frosting

Ingredients:

For the Cake:

2 1/2 cups All-purpose flour
2 tsp Baking powder
1/4 tsp Baking soda
1/2 tsp Salt
3/4 cup Unsalted butter, room temperature
1/4 cup Vegetable oil
1 1/2 cups Sugar
4 large Eggs
16 oz Crushed pineapple (with juice)
1 tsp Vanilla extract

For the Pineapple Filling:

1/3 cup Sugar
1 1/2 tbsp Cornstarch
8 oz Crushed pineapple (with juice)
2 tbsp Water

For the Whipped Cream Frosting:

3 1/2 cups Heavy whipping cream, cold
1 1/2 cups Powdered sugar
1 tbsp Vanilla extract
Dried pineapple slices for decoration

Instructions:

Bake the Cake: Mix dry ingredients, cream butter with oil and sugar, then add eggs, crushed pineapple, and dry ingredients alternately. Divide into 3 pans and bake.

Prepare the Filling: Cook sugar, cornstarch, pineapple with juice, and water until thickened. Chill completely.

Whipped Cream Frosting: Whip heavy cream with powdered sugar and vanilla until stiff peaks form.

Assemble the Cake: After cakes cool, layer with pineapple filling and whipped cream frosting. Decorate with whipped cream swirls and dried pineapple slices.
