Pineapple Layer Cake with Whipped Cream Frosting

Ingredients
  

For the Cake:

  • 2 1/2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 tsp Salt
  • 3/4 cup Unsalted butter room temperature
  • 1/4 cup Vegetable oil
  • 1 1/2 cups Sugar
  • 4 large Eggs
  • 16 oz Crushed pineapple with juice
  • 1 tsp Vanilla extract

For the Pineapple Filling:

  • 1/3 cup Sugar
  • 1 1/2 tbsp Cornstarch
  • 8 oz Crushed pineapple with juice
  • 2 tbsp Water

For the Whipped Cream Frosting:

  • 3 1/2 cups Heavy whipping cream cold
  • 1 1/2 cups Powdered sugar
  • 1 tbsp Vanilla extract
  • Dried pineapple slices for decoration

Instructions
 

  • Bake the Cake: Mix dry ingredients, cream butter with oil and sugar, then add eggs, crushed pineapple, and dry ingredients alternately. Divide into 3 pans and bake.
  • Prepare the Filling: Cook sugar, cornstarch, pineapple with juice, and water until thickened. Chill completely.
  • Whipped Cream Frosting: Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  • Assemble the Cake: After cakes cool, layer with pineapple filling and whipped cream frosting. Decorate with whipped cream swirls and dried pineapple slices.
