Creamy Roasted Butternut Squash Bake
This wonderful side dish consists of tender roasted butternut squash, cloaked in a savory and creamy sauce of herbs, cream and cheese. It is a perfect dish to serve alongside your evening meal or even as an elegant side dish for the holidays.

- 6 cups butternut squash peeled, seeded, and cut into bite-sized cubes
- 1 small onion diced
- 4 cloves of garlic chopped
- 1 tablespoon fresh thyme chopped (or 1 teaspoon dried thyme)
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup crumbled feta cheese
- Salt and pepper to taste
Instructions
Preheat the Oven:
- Set your oven to 400°F (200°C).
Prepare the Ingredients:
- In a large mixing bowl, combine the butternut squash cubes, diced onion, chopped garlic, thyme, heavy cream, grated Parmesan cheese, and crumbled feta. Season with salt and pepper to taste. Stir everything together until well combined.
Transfer to Baking Dish:
- Place the mixture into a baking dish, spreading it out evenly.
Bake to Perfection:
- Bake in the preheated oven for 30-40 minutes, or until the squash is tender, the top is lightly golden, and the sides are bubbling.
