Mediterranean Spinach and Feta Cheese Crisps
Crispy, savory Mediterranean spinach and feta cheese crisps are a delicious and healthy snack or appetizer. Perfect for any occasion, they combine fresh spinach with tangy feta for a flavorful bite.
Ingredients
- 2 cups fresh spinach finely chopped
- 1 cup feta cheese crumbled
- 1/2 cup almond flour
- 1 large egg
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the spinach, feta, almond flour, egg, olive oil, garlic powder, salt, and pepper.
- Scoop tablespoon-sized portions of the mixture onto the baking sheet, flattening them slightly.
- Bake for 15-18 minutes until golden and crispy.
- Let cool for 5 minutes before serving.
Notes:
- Store leftovers in an airtight container for up to 3 days.
- Add a pinch of red pepper flakes for extra spice.
- For a dairy-free option, substitute feta with vegan cheese.
