Spinach Ricotta Stuffed Chicken
Spinach Ricotta Stuffed Chicken is a savory, satisfying dish that combines tender chicken breasts with a creamy and flavorful spinach-ricotta filling. Equipment
- Large Skillet (oven-safe) (I prefer cast-iron, it goes from stove/oven to table)
Ingredients
- chicken breasts
- 1 cup ricotta cheese
- 1 cup spinach chopped
- 1/4 cup Parmesan cheese grated
- 2 cloves garlic minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon dried Italian herbs
Instructions
- Preheat oven to 375°F (190°C).
- Make a pocket in each chicken breast by cutting along the side. Be careful not to cut all the way through.
- In a bowl, mix together ricotta cheese, spinach, Parmesan cheese, garlic, salt, and pepper.
- Stuff each chicken breast with the ricotta mixture and secure with toothpicks if necessary.
- Season the outside of the chicken with salt, pepper, and dried Italian herbs.
- Heat olive oil in a large skillet over medium heat. Add the chicken and sear until golden brown on each side, about 3-4 minutes per side.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
