Ingredients
  

  • chicken breasts
  • 1 cup ricotta cheese
  • 1 cup spinach chopped
  • 1/4 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried Italian herbs

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Make a pocket in each chicken breast by cutting along the side. Be careful not to cut all the way through.
  • In a bowl, mix together ricotta cheese, spinach, Parmesan cheese, garlic, salt, and pepper.
  • Stuff each chicken breast with the ricotta mixture and secure with toothpicks if necessary.
  • Season the outside of the chicken with salt, pepper, and dried Italian herbs.
  • Heat olive oil in a large skillet over medium heat. Add the chicken and sear until golden brown on each side, about 3-4 minutes per side.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
