Zesty Lime and Chili Infused Chicken

Ingredients
- 12 chicken drumsticks skin on, bone-in
- 1 cup Greek yogurt
- 1/4 cup olive oil
- 5 cloves garlic minced
- 1-2 tablespoons chili paste
- 2 limes juiced
- 2.5 teaspoons salt
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Parsley for garnish
Instructions
- Rinse and pat dry the chicken drumsticks.
- In a large bowl, mix together the Greek yogurt, olive oil, minced garlic, chili paste, lime juice, and all seasonings until well combined.
- Add the drumsticks to the bowl and thoroughly coat them with the marinade. Cover and refrigerate for at least 30 minutes, ideally 1-2 hours.
- Preheat the oven to 375°F.
- Arrange the drumsticks in a large baking dish and roast for 45-50 minutes, or until the internal temperature reaches 165°F.
- For extra crispiness, broil the chicken for 5 minutes at the end of cooking.
- Let the chicken rest for 5 minutes before serving. Garnish with parsley.
