Looking for a unique appetizer dip to serve for the holidays? This Thyme-Infused Feta & Almond Dip is a healthy and delicious alternative to hummus or run of the mill ranch type dips. Made with fresh ingredients, it is an easy and impressive appetizer to serve to your guests or to just keep for yourself.

  • 1 cup extra-virgin olive oil divided
  • 4 sprigs of fresh thyme
  • 1 handful of almonds or your preferred nuts, roughly chopped
  • 8 garlic cloves thinly sliced
  • 1/2 teaspoon Aleppo pepper or red chili flakes optional for a hint of heat
  • 3 ounces 85 g feta cheese, crumbled
  • 1/3 cup fresh parsley chopped
  • Fresh bread for serving

Heat the Oil:

  • In a small saucepan over medium heat, warm 3/4 cup of the olive oil. Set aside the remaining 1/4 cup for later.

Infuse with Thyme:

  • Carefully add the thyme sprigs to the hot oil. They’ll sizzle as they release their aroma. When the sizzling subsides, lower the heat to medium-low.

Toast the Almonds:

  • Add the chopped almonds and cook for 2-3 minutes until they start to turn golden.

Add Garlic and Spice:

  • Stir in the garlic slices and Aleppo pepper (if using), cooking for about a minute until fragrant.

Cool Slightly:

  • Remove the saucepan from the heat and stir in the reserved 1/4 cup olive oil to bring down the temperature slightly.

Combine with Feta & Herbs:

  • Crumble the feta cheese into the oil mixture, adding a small splash of feta brine for extra flavor if desired. Stir in the chopped parsley and gently mash the feta to combine.

Serve:

  • Serve warm with fresh bread on the side for dipping.
  • Enjoy this Mediterranean-inspired dip for an elegant yet easy appetizer!
