Instructions
Heat the Oil:
In a small saucepan over medium heat, warm 3/4 cup of the olive oil. Set aside the remaining 1/4 cup for later.
Infuse with Thyme:
Carefully add the thyme sprigs to the hot oil. They’ll sizzle as they release their aroma. When the sizzling subsides, lower the heat to medium-low.
Toast the Almonds:
Add the chopped almonds and cook for 2-3 minutes until they start to turn golden.
Add Garlic and Spice:
Stir in the garlic slices and Aleppo pepper (if using), cooking for about a minute until fragrant.
Cool Slightly:
Remove the saucepan from the heat and stir in the reserved 1/4 cup olive oil to bring down the temperature slightly.
Combine with Feta & Herbs:
Crumble the feta cheese into the oil mixture, adding a small splash of feta brine for extra flavor if desired. Stir in the chopped parsley and gently mash the feta to combine.
Serve:
Serve warm with fresh bread on the side for dipping.
Enjoy this Mediterranean-inspired dip for an elegant yet easy appetizer!
