Creamy Garlic Chicken Parmesan Pasta

Ingredients
  

  • 8 oz fettuccine pasta
  • 2 boneless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/4 cup white wine optional
  • 1 cup cherry tomatoes halved
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 1/4 teaspoon red pepper flakes optional
  • Lemon wedges for garnish

Instructions
 

  • Cook the fettuccine pasta according to package instructions. Drain and set aside.
  • Season the chicken pieces with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  • If using, pour in the white wine and cook for another 2 minutes, allowing it to reduce by half.
  • Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
  • Pour in the chicken broth, heavy cream, and grated Parmesan cheese. Stir until the sauce is smooth and creamy.
  • Return the cooked chicken to the skillet and simmer for 2-3 minutes until heated through.
  • Stir in the chopped parsley and red pepper flakes if you like a bit of heat.
  • Serve the creamy garlic Parmesan chicken pasta over the cooked fettuccine. Garnish with lemon wedges and additional parsley if desired.
