Ingredients
  

  • 1 baguette sliced into ½-inch thick rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups fresh cranberries
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 wheel of creamy brie cheese
  • Fresh thyme leaves for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • To make the crostini, arrange the baguette slices on a baking sheet. Brush both sides with olive oil, sprinkle with salt and pepper, then bake for 10-12 minutes until golden and crispy.
  • Combine cranberries, balsamic vinegar, honey, and thyme in a bowl. Toss to coat.
  • Spread cranberries on a baking sheet and roast in the oven for 15-20 minutes until soft and caramelized.
  • Slice brie cheese thinly and place a slice on each crostini. Top with balsamic roasted cranberries and garnish with fresh thyme leaves.
  • Serve immediately and enjoy!
