Ingredients
  

  • 1 lb ground chicken
  • 1 egg
  • ¼ cup breadcrumbs
  • cup red bell pepper finely diced
  • 2 tablespoons green onion diced
  • 2 teaspoons smoked paprika
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon sea salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 2 cloves garlic finely chopped or minced
  • 1 tablespoon avocado oil or oil of your choice, more if needed
  • 4 slices cheddar cheese
  • 2 strips bacon cooked and cut in half
  • 2 brioche buns toasted
  • Mayo
  • Sriracha sauce
  • Red onion sliced

Instructions
 

  • In a mixing bowl, combine ground chicken, egg, breadcrumbs, red bell pepper, green onion, smoked paprika, Cajun seasoning, sea salt, black pepper, and garlic. Mix well.
  • Divide the mixture into four equal parts, roll each into a ball.
  • Heat avocado oil in a skillet over medium heat. Place the balls in the skillet and smash them into patties using a spatula. Cook for 4-5 minutes on one side, then flip.
  • Place a slice of cheddar cheese on each patty, cover the skillet with a lid, and cook for another 3-4 minutes until cheese melts.
  • While the patties are cooking, prepare the buns by spreading mayo and sriracha sauce on each half. Place a patty on the bottom bun, add red onion and two pieces of bacon, then cover with the top bun.
  • Serve hot and enjoy!
