Try this classic meatloaf with a twist, add iron packed spinach and top it off with guiltless mozzarella. A healthier version of meatloaf...who knew! Also, a great way to get the kids (or anyone else who avoids them) to eat their veggies!
Preheat your oven to 350°F (175°C) to prepare for baking.
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground beef, finely chopped spinach, breadcrumbs, 1 1/2 cups of the shredded mozzarella cheese, beaten eggs, finely chopped onion, crushed garlic, salt, and pepper. Mix everything thoroughly until the ingredients are evenly combined.
Transfer to the Loaf Pan:
Press the meat mixture evenly into a loaf pan, making sure it's compact.
Bake the Meatloaf:
Place the loaf pan in the preheated oven and bake for about 75 minutes, or until the internal temperature reaches 160°F (71°C), ensuring it's fully cooked.
Add the Cheese:
Remove the meatloaf from the oven and sprinkle the remaining 1/2 cup of mozzarella cheese on top. Return it to the oven for another 5-10 minutes until the cheese is melted and bubbly.
Serve:
Let the meatloaf rest for a few minutes after baking, then slice and serve. Enjoy the rich flavors of cheesy, savory goodness!
