Ingredients
  

For the filling:

  • 1 cup fresh spinach chopped
  • ½ cup ricotta cheese
  • ¼ cup sun-dried tomatoes chopped

For the sandwich:

  • 4 slices hearty bread sourdough or whole wheat Thicker bread is recommended.
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste

Optional: fresh basil for garnish

Instructions
 

Preparation:

  • In a mixing bowl, combine the ricotta cheese, chopped spinach, and sun-dried tomatoes. Mix well and season with salt and pepper to taste.

Assembling and Grilling:

  • Spread a generous amount of the ricotta mixture onto two slices of bread. Sprinkle shredded mozzarella cheese on top before placing the other slices on top.
  • Heat olive oil or butter in a skillet over medium heat until hot.
  • Place the sandwiches in the skillet and cook until the bread is golden brown and crispy, about 3-4 minutes per side.
  • Remove the sandwiches from the skillet and let them rest for a minute before slicing.

Serving:

  • Cut the sandwiches in half and serve warm, garnished with fresh basil if desired.

Notes:

  • Thicker bread will hold the filling better. Experiment with different cheeses and add-ins like grilled chicken for variations.
