Ingredients:

For Shrimp:
1 lb. peeled and de-veined shrimp
Juice of 1 ripe lime
1/4 cup avocado oil
1 tsp salt
1/4 tsp black pepper
1 tsp paprika
1/2 tsp chili powder
1 tsp garlic powder
1 tsp cumin
1 tbsp brown sugar

Cabbage:

1 1/2 cups thinly sliced cabbage
2 tbsp avocado oil
1 tbsp lime juice
1/4-1/2 tsp salt (to taste)
1/2 tsp sugar

Taco Sauce:

1/2 cup sour cream
2 tbsp mayonnaise
1/2 tbsp fresh lime juice
2 tbsp minced fresh cilantro
1 garlic clove, pressed
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp onion powder

Toppings:

1 ripe avocado, sliced
1/4 cup crumbled cotija cheese
4-6 taco tortillas

Directions:

Marinate shrimp: Combine shrimp, avocado oil, lime juice, and all seasonings in a bowl. Set aside to marinate for 10 minutes.
Prepare cabbage: Toss cabbage with avocado oil, lime juice, salt, and sugar. Massage lightly and set aside.
Make sauce: Mix all sauce ingredients in a bowl. For smoother texture, blend if desired.
Cook shrimp: Heat a pan over medium-high. Sear marinated shrimp for about 45 seconds per side or until opaque. Remove immediately.
Assemble tacos: Warm tortillas, then layer with cabbage, shrimp, avocado slices, and cotija cheese. Drizzle with taco sauce.
