Just made this amazing Caramel Apple Cheesecake – the perfect blend of sweet apples and rich caramel! 

Ingredients:

2 cups finely crushed graham crackers
1/2 cup unsalted butter, melted
3 large apples, peeled, cored, and thinly sliced
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
Caramel sauce for drizzling

Directions:

Preheat the oven to 350°F (175°C).
In a bowl, combine the crushed graham crackers and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
In a skillet, sauté the apples with brown sugar, cinnamon, and nutmeg until just softened. Set aside to cool.
In a large mixing bowl, beat the cream cheese with granulated sugar and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
Pour half of the cream cheese mixture over the crust. Layer with sautéed apples, then top with the remaining cream cheese mixture.
Bake in the preheated oven for 50 minutes, or until the center is almost set. Allow to cool completely before removing from the pan.
Drizzle with caramel sauce before serving.
