Ingredients:

4 boneless, skinless chicken breasts
1 package (8 oz) cream cheese, softened
1 cup fresh spinach, chopped
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1/2 teaspoon paprika
Toothpicks or kitchen string for securing

Directions:

Preheat oven to 375°F (190°C).
In a medium bowl, combine cream cheese, spinach, garlic, salt, and pepper.
Cut a pocket into each chicken breast, being careful not to cut all the way through.
Stuff each pocket with the cream cheese and spinach mixture and secure with toothpicks or kitchen string.
Rub each chicken breast with olive oil and sprinkle with paprika.
Place the chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is thoroughly cooked.
Let rest for a few minutes before serving.
