Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 package 8 oz cream cheese, softened
  • 1 cup fresh spinach chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • Toothpicks or kitchen string for securing

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a medium bowl, combine cream cheese, spinach, garlic, salt, and pepper.
  • Cut a pocket into each chicken breast, being careful not to cut all the way through.
  • Stuff each pocket with the cream cheese and spinach mixture and secure with toothpicks or kitchen string.
  • Rub each chicken breast with olive oil and sprinkle with paprika.
  • Place the chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is thoroughly cooked.
  • Let rest for a few minutes before serving.
