Ingredients:
- 8 oz fettuccine pasta
- 2 boneless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1/4 cup white wine optional
- 1 cup cherry tomatoes halved
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley chopped
- 1/4 teaspoon red pepper flakes optional
- Lemon wedges for garnish
Instructions:
- Cook the fettuccine pasta according to package instructions. Drain and set aside.
- Season the chicken pieces with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
- If using, pour in the white wine and cook for another 2 minutes, allowing it to reduce by half.
- Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
- Pour in the chicken broth, heavy cream, and grated Parmesan cheese. Stir until the sauce is smooth and creamy.
- Return the cooked chicken to the skillet and simmer for 2-3 minutes until heated through.
- Stir in the chopped parsley and red pepper flakes if you like a bit of heat.
- Serve the Creamy Garlic Chicken Parmesan Pasta over the cooked fettuccine. Garnish with lemon wedges and additional parsley if desired.
