Beer-Battered Onion Rings

Ingredients
Onion Rings:
- 1 1/3 cup all-purpose flour
- 1 cup red ale can also use lager or another ale
- 1/2 tsp baking powder
- 1 Tbsp Worcestershire sauce
- Salt to taste
- Black pepper to taste
- 1 large onion white or sweet
- 3-4 cups canola or vegetable oil for frying
Onion Ring Sauce:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp ketchup
- 1 1/2 tbsp horseradish
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Pinch of cayenne pepper
Instructions
- In a medium mixing bowl, whisk together the flour, baking powder, salt, and pepper.
- Pour in the beer and Worcestershire sauce, whisking until smooth.
- Let the batter sit covered for about 30 minutes.
- Slice the onion into 1/4-inch to 1/2-inch-thick rings and pat dry with paper towels.
- Heat the oil in a deep skillet or fryer to 350°F - 365°F.
- Dip onion rings into the batter and fry in the oil until golden brown on both sides, flipping once.
- Fry in batches, without overcrowding, and remove with metal tongs or a slotted spoon to a wire rack lined with paper towels.
- Mix all sauce ingredients until smooth and serve with the hot onion rings.
