Ingredients
  

  • 2 large cucumbers peeled and thinly sliced
  • 2 teaspoons salt
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 2 cloves garlic minced
  • 1 teaspoon chili flakes
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon sesame seeds

Instructions
 

  • Place the cucumber slices in a bowl and sprinkle with salt. Let sit for 10 minutes to draw out water. Drain and squeeze out excess water.
  • In a small bowl, combine sesame oil, soy sauce, rice vinegar, sugar, garlic, and chili flakes to create the dressing.
  • Toss the cucumbers with the dressing, then garnish with cilantro and sesame seeds.
  • Chill before serving to enhance the flavors.
