Pineapple Layer Cake with Whipped Cream Frosting

Ingredients
For the Cake:
- 2 1/2 cups All-purpose flour
- 2 tsp Baking powder
- 1/4 tsp Baking soda
- 1/2 tsp Salt
- 3/4 cup Unsalted butter room temperature
- 1/4 cup Vegetable oil
- 1 1/2 cups Sugar
- 4 large Eggs
- 16 oz Crushed pineapple with juice
- 1 tsp Vanilla extract
For the Pineapple Filling:
- 1/3 cup Sugar
- 1 1/2 tbsp Cornstarch
- 8 oz Crushed pineapple with juice
- 2 tbsp Water
For the Whipped Cream Frosting:
- 3 1/2 cups Heavy whipping cream cold
- 1 1/2 cups Powdered sugar
- 1 tbsp Vanilla extract
- Dried pineapple slices for decoration
Instructions
- Bake the Cake: Mix dry ingredients, cream butter with oil and sugar, then add eggs, crushed pineapple, and dry ingredients alternately. Divide into 3 pans and bake.
- Prepare the Filling: Cook sugar, cornstarch, pineapple with juice, and water until thickened. Chill completely.
- Whipped Cream Frosting: Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Assemble the Cake: After cakes cool, layer with pineapple filling and whipped cream frosting. Decorate with whipped cream swirls and dried pineapple slices.
