Smokey Cajun Chicken Burger

Equipment
- Large Skillet (I like cast-iron, it goes from stove/oven to table)
Ingredients
- 1 lb ground chicken
- 1 egg
- ¼ cup breadcrumbs
- ⅓ cup red bell pepper finely diced
- 2 tablespoons green onion diced
- 2 teaspoons smoked paprika
- 2 teaspoon Cajun seasoning
- 1 teaspoon sea salt or to taste
- ¼ teaspoon black pepper or to taste
- 2 cloves garlic finely chopped or minced
- 1 tablespoon avocado oil or oil of your choice, more if needed
- 4 slices cheddar cheese
- 2 strips bacon cooked and cut in half
- 2 brioche buns toasted
- Mayo
- Sriracha sauce
- Red onion sliced
Instructions
- In a mixing bowl, combine ground chicken, egg, breadcrumbs, red bell pepper, green onion, smoked paprika, Cajun seasoning, sea salt, black pepper, and garlic. Mix well.
- Divide the mixture into four equal parts, roll each into a ball.
- Heat avocado oil in a skillet over medium heat. Place the balls in the skillet and smash them into patties using a spatula. Cook for 4-5 minutes on one side, then flip.
- Place a slice of cheddar cheese on each patty, cover the skillet with a lid, and cook for another 3-4 minutes until cheese melts.
- While the patties are cooking, prepare the buns by spreading mayo and sriracha sauce on each half. Place a patty on the bottom bun, add red onion and two pieces of bacon, then cover with the top bun.
- Serve hot and enjoy!
