Ingredients

  • 2 pounds ground beef
  • 1/2 package about 5 ounces fresh spinach, finely chopped
  • 2 cups breadcrumbs
  • 2 cups shredded mozzarella cheese divided
  • 1/2 onion finely chopped
  • 3 cloves garlic crushed
  • 3 eggs lightly beaten
  • 1 teaspoon salt
  • Freshly ground black pepper to taste

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F (175°C) to prepare for baking.

Prepare the Meatloaf Mixture:

  • In a large mixing bowl, combine the ground beef, finely chopped spinach, breadcrumbs, 1 1/2 cups of the shredded mozzarella cheese, beaten eggs, finely chopped onion, crushed garlic, salt, and pepper. Mix everything thoroughly until the ingredients are evenly combined.

Transfer to the Loaf Pan:

  • Press the meat mixture evenly into a loaf pan, making sure it’s compact.

Bake the Meatloaf:

  • Place the loaf pan in the preheated oven and bake for about 75 minutes, or until the internal temperature reaches 160°F (71°C), ensuring it’s fully cooked.

Add the Cheese:

  • Remove the meatloaf from the oven and sprinkle the remaining 1/2 cup of mozzarella cheese on top. Return it to the oven for another 5-10 minutes until the cheese is melted and bubbly.

Serve:

  • Let the meatloaf rest for a few minutes after baking, then slice and serve. Enjoy the rich flavors of cheesy, savory goodness!
