Herbed Chicken with Goat Cheese and Prosciutto

Just whipped up this Rustic Rosemary-Infused Chicken Wrapped in Prosciutto for dinner tonight! So aromatic and absolutely delicious!

Ingredients
  

  • 3 large chicken breasts
  • Salt & pepper to taste
  • 1/4 cup of olive oil
  • 3 cloves of garlic minced
  • 1 sprig of rosemary de-stemmed and finely chopped
  • 6 sprigs of fresh rosemary
  • 6 tablespoons of goat cheese 3–4 ounces
  • 6 slices of prosciutto

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a baking pan or skillet.
  • Cut all the chicken breasts in half. Make a slit down the middle of each half to create a pocket. Season with salt and pepper.
  • In a shallow bowl, combine the olive oil, minced garlic, and finely chopped rosemary. Dip each chicken half in the mixture, coating both sides.
  • Place the chicken in the prepared baking pan. Stuff each piece with approximately 1 tablespoon of goat cheese.
  • Top each piece of chicken with a sprig of rosemary and wrap in a slice of prosciutto. Use a toothpick to secure if necessary.
  • Bake for 35-45 minutes, checking for doneness at 35 minutes. Let cool slightly before serving.
