Ingredients

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 5 Tbsp cold unsalted butter
  • 1 cup cold low-fat buttermilk
  • 1 cup shredded cheddar cheese
  • 3 seeded minced jalapeños
  • 1/2 tsp white pepper
  • Pinch white granulated sugar
  • Extra shredded cheddar for topping

Instructions

  • Preheat the oven to 425℉ and lightly grease a baking sheet.
  • In a mixer, combine flour, baking powder, baking soda, sugar, white pepper, and salt.
  • Grate cold butter into the flour mixture until it resembles coarse crumbs.
  • Stir in cheddar cheese and jalapeños until just mixed.
  • Add buttermilk and mix until just combined; the dough should be sticky.
  • On a floured surface, knead the dough 5-6 times and pat into a 1/2-inch-thick circle.
  • Cut out biscuits with a 2-inch cookie cutter. Gather and reshape scraps to cut more biscuits.
  • Place biscuits on the baking sheet, brush with melted butter, sprinkle with cheddar, and bake for 15-18 minutes until golden brown.
